What about Kale!

I recently surprised by how many people didn't recognize this wonderful member of the cabbage family. Kale comes in several varieties: curly kale with ruffled leaves; Lacinato or Tuscan kale with dark blue-green leaves and sweeter flavor than curly kale; and ornamental kale with green, white or purple leaves. All varieties are high in nutrients like Vitamin A and C, and are a great source of fiber. Kale can be eaten raw, sauteed, steamed or baked.
